Cajun Chicken Pasta

Being close to Louisiana, I grew up around Cajun foods. Since I haven’t been there in a while, I decided to buy some Cajun seasoning to experiment while cooking. OH MY GOSH, that was the greatest idea I’ve ever had, because this pasta was sooooo delicious!

Cajun Chicken Pasta

Ingredients
1 box pasta
1 large can petite diced tomatoes
2 tablespoons olive oil
3 cloves garlic, crushed (because really, who likes chopping garlic..?)
1 onion, chopped
1 bell pepper, chopped
10 oz cooked chicken breast, shredded or 1 can of chicken breast
1 tablespoon Cajun seasoning, more to taste

Directions
1. In a pot, begin cooking pasta to box directions.
2. In a second pot or skillet, saute garlic and onions. After two minutes, add peppers. Continue to saute the vegetables for about one more minute. Add shredded chicken and mix. After about two minutes, set this mixture aside in another plate or bowl.
3. Using the now-empty pot, begin to cook the can of tomatoes; fill the can 1/3 of the way with water and add it to the pot. This water helps release more juice from the tomatoes. After the sauce gets pretty thick (3-4 minutes), mash the tomatoes with a spatula. Stir in Cajun seasoning and continue to cook for about five more minutes. Once the sauce is thick and the tomatoes are ready, add in the chicken and vegetables.
4. Once pasta is filly cooked, mix in the sauce and serve!

This really is quite the yummy treat. One of my friends at work can’t eat spicy or hot foods, but she tried it and thought it was really great, so it’s good even for those that can’t eat hot foods!

I think next time I might try to use sausage. Let me know if you try this out!
